Mini Protein Berry Cheesecakes
- 1 small 170g tub of 0% Total Greek yogurt
- 2 tbsp of quark (or cottage cheese)
- 1 tbsp of coconut flour
- 1/4 cup of mulberries (or any other dried berry)
- 2 fresh organic eggs
- 1/4 cup of vanilla whey
Directions
- Blend ingredients together.
- Add 1 cup of fresh blackberries.
- Mix berries in with fork/spoon instead of blending.
- Pour the mix into your mold/s.
- Bake at 170º C (340º F) for about 35 minutes.
- Take them out, let them cool, eat them.

Sweet Oatmeal Bread
- 1 banana
- 5 eggs
- spoon of yogurt
- 2 cups of milk
- 2 spoons of kefir (optional, just add another spoon of yogurt if n/a)
- 2 spoons of brown sugar (original recipe had maple syrup)
- half a cup of walnuts
- cup of raisins, dried cranberries, chopped up dried apricots, etc.
- dash of salt, two spoons of cinnamon
- two spoons of coconut oil (or any other vegetable oil)
- pound of oats (I used ready to cook, but you can soak your oats in the milk before hand if you have steel cut)
Mix all of it, put in a lightly greased pan, cook in 350 degrees until golden brown.
SUPER easy to make, very chewy, delicious, just a tad sweet, filling, high in fiber, high in protein, low in fat and carbs (no flour, no white sugar, very little oil), overall an amazing snack/dessert.
… I might even make these tonight?

OATMEAL BLUEBERRY APPLESAUCE MUFFINS (LOW FAT)
Ingredients:
- Whole Wheat Pastry Flour - 1 1/4 cups
- Quaker Oats (Quick-1 Minute) - 1 1/4 cups
- Baking Powder - 1 tsp
- Baking Soda - 1/2 tsp
- Salt - 1/4 tsp
- Cinnamon - 1/2 tsp
- Mott’s Unsweetened Applesauce - 1 cup
- Buttermilk - 1/2 cup
- Brown Sugar - 1/2 cup
- Canola Oil - 2 tbsp
- Vanilla Extract - 1 tsp
- Egg - 1
- Blueberries - 3/4 cup
Directions:
Preheat oven to 375 degrees. Line muffin tins with cupcake liners. In a large bowl, combine the dry ingredients… whole wheat pastry flour, oats, baking powder, baking soda, salt, and cinnamon. Set aside. In another bowl, combine the following ingredients… applesauce, buttermilk, canola oil, brown sugar, vanilla extract, and egg. Now add the wet ingredients to the dry and fold the mixture. DO NOT OVERMIX. Add the blueberries and fold. Spoon the batter into the cupcake liners, I just use an ice cream scoop. Place the muffins in the oven for 16-18 minutes. Mine took 18 minutes exactly. Allow the muffins to cool… although I was unable to resist eating a perfectly warm blueberry muffin. This recipe yields 12 muffins with 151 calories each.
